Food I Want to Learn How to Make...(and will take some instruction/hard work!)

1. pita bread. all from scratch, like my other grandmother/aunts/cousins/and now, probably nieces all know how to do. It should practically be genetic. All the women in my family can make both thin, crunchy, and elongated pitas as well as soft, round, and buttery ones (Sitti's specialty, of course...)

2. feta cheese. also something my dad's family makes.

3. tagliatelle (possibly my favorite Italian pasta), from scratch.

I avoid box mixes and things like that...and when I do end up using a box mix, I feel tremendously guilty and immediately set to work improvising some complicated little twist to spice it up. So, FROM SCRATCH it is.

4. Brazilian Cheese bread.

5. Garlic cheese rolls.

6. Pumpkin bread... from pumpkin to plate

7. Oh, you wouldn't believe it, but I'd never before seen a deep fryer in my life until last month. A little domestic version. Evidence that I'm from the North...

8. croissants

9. chocolate confections. ALL KINDS. Candies. Dark. Milk. Cocoa. Cakes. Liquid chocolate. Chocolate cream centers. Cakes. Filled with nuts, fruits, liquors, flowers. All temperatures and kinds, I want to learn the chemistry of chocolate!

There is, of course, more.
